Milk Chocolate Mini Bundt Cakes

This week's Tuesdays with Dorie recipe is the Milk Chocolate Mini Bundt Cakes. I'm no bundt connoisseur like Mary but I did lust after one of those cathedral bundt pans at Williams Sonoma for a couple of years before I found this mini one on clearance there for $9.99 when I was pregnant with my little man (and my tall man was more than willing to placate his crazy wife, thank goodness!). Well I'll be honest and tell you I've only used it three times so far but the results have been adorable each time so I think it was worth it.

Really though, I have serious issues with baking pans. Every time I see a fancy pan I pick it up, look it over, and have to really convince myself to put it back (or if I'm at Ross or TJ Maxx and find a good deal I carefully put it in the cart and hope my husband doesn't notice my growing collection!). The pan I've really been looking to get lately is a Mini Cheesecake Pan, one that has the removable bottoms for perfect bite size cheesecake any time. Anyways, I hope I'm not the only one with these issues! Thank goodness for Tuesdays with Dorie and so many different recipes to test my boundaries and use my many purchases. I'm also grateful for the nice tall cabinet in my garage right outside my kitchen door to house my overflowing kitchen appliances and pans!

So back to these cakes. They come together in a snap and house a nice layer of cocoa powdered coated walnuts. That was my favorite part of the cake. Next time I would use bittersweet chocolate since the chocolate flavor was very weak and then top them with ganache. The melted chocolate with corn syrup never came together for me but my kitchen helpers were happy to eat it right away. We actually dipped almonds in the extra failed glaze and that snack was as delicious as the cake!

When my brother tried one he said, "it's kind of like a donut, eh." So my mom of course told him not to eat it if he didn't like it, to which he replied, "Oh I'll eat it, don't worry!" Yay for single guys, too funny. So while this wasn't our favorite we certainly ate it. Dorie is spoiling us all!

  4. Baby Strawberry is gorgeous!!! Your cakes look so good. I also have a cake pan addiction! In fact, I have two William-Sonoma mini cheesecake pans and would be willing to sell you one if you are interested. They are like new. Bought two when I thought I was going to be making a lot for a coffee shop.

  12. I have those cake pan issues too! So much that I keep myself from buying another mini bundt pan. I really need a good one. Yours came out so sweet and precious. Your baby is so sweet and precious!!! I always wanted a strawberry haired baby. You are so blessed.

  13. Oh Anne, Baby Strawberry is gorgeous!!! How is it possible that she is rocking the exersaucer already??? She will be getting some of that chocolate cake in no time. I had to laugh about your love of pans. I have the same problem. But not only do I find it hard to resist classic bakeware, I'm a sucker for the (not particularly versatile) Nordic Ware novelty pans (I have the train cake, the snowman, and the bunny pan). I've got my eye on the bugs and butterfly cakelet pan and the beehive pan next. My hubs has definitely noticed, but when I tell him that I'm the wife who would rather have a pan than jewelry, suddenly it doesn't seem so bad. :-)

    Your mini bundts are adorable! So very true that Dorie has spoiled us.

  15. Anne, those are the cutest little bundts I've ever seen Who knew tiny bundts even existed? Mini, yes . . . but teeny-tiny?? No, I never knew. (They're rivaled in cuteness only by your petite and adorable baby girl, of course!)

    Your cakes look great even without the chocolate frosting. With that mold, you don't need anything.

  18. Baby Strawberry is so unbelievably cute!! Your minis are adorable too. I have much the same problem with baking pans - I'm at the point now where there's just not any more room for them around here so it's helping to curb my habit just a bit :)

  21. Oh Anne, You have a "Miss Pink!" I am so excited for you. I haven't been around lately so I'm sorry to say this is my first visit back in some time (obviously) or I would have known. I have the same prob with pan collections and blogging is one more excuse. hehe
    I don't have a mini but agree completely with your selection. Most others are homely to me. Also agree with your dark chocolate choice. These are great for the milk folks though. Photos-cakes and "Miss Pink" are adorable and congratulations.
